in the Italian Google Play there is still the 5.6.2 version today, the 21st of January. Is it normal?

Yes it is. There were some inconsistencies with the 5.7 version, we had to temporarily halt its further distribution while we're working on fixes. So the next version should be the 5.7.1 one. If all goes well, you should be able to see it this on next week already.
