Seems to be an issue which has to be solved via next update
Everything I mention comes out of my experience. I'm not an expert. Feel free to try anything I suggest ... but always at your own risk.

It is working fine with dates on my Moto G 2021 phone and samsung Galaxy Tab A 2019 both with Android 11

OK, this is interesting. My post a few days ago, I had recently upgraded my phone about two weeks prior. I just checked my old phone (Samsung Galaxy S8+), running Android 9 and EPIM 5.8.7 and task dates appear on that.

So far, using AEPIM 6.0 Beta 2, date fields are there and stay for some weeks now.
What I did, was deinstall old version 5.8.6, install 6.0/beta 2 and sync WinEPIM to AEPIM (1-way) and it was fine
