Add to the appointment right click menu.
When I have an appointment, quiet often it is canceled or rescheduled.
Would you add two more items to the right click completion menu?
1. Cancel: and hide the appointment.
2. Reschedule: and have a pop up to change the appointment to another date.

1. Would this somehow be different than the regular "delete" action?
2. Do you think a pop up should look different than the one you get when using the "edit" option?

1. The difference is if you delete, all the information is gone.
Cancel: and stamp Canceled and hide it all in one step. You'll know it was not a completed appointment.
There maybe an important name or telephone # or other info. needed to
reschedule later. un-Hide and you have all your information
2. I agree here, after thinking about it it's best the way it is.

1. So you see it acting much like a completed event with an additional option to show/hide completed (cancelled in this case)?

Here's how I handle cancelled appointments with information I don't want to loose as I would with deleting them:
I created a new calendar called "Cancelled". I don't normally display it. For an appointment on the "Main" calendar that I want to cancel, but not delete, I simply change it's calendar to "Cancelled". This way, if I only display the "Cancelled" calendar, I can see all my cancelled appointments. I can re-schedule a cancelled appointment by simply changing its calendar to the "Main" one.
I am not saying that there isn't a better way to do this, I am just using the existing capabilities of WinEPIM v11.1.1 until an alternative method is introduced.
