I have the same bug with Outlook, Yandex and Vivaldi accounts. Sometimes EPIM moves some of emails to Deleted Items without asking or warning and I have to restore them back to inbox manually.

It's gotten to the point where I have to text (or make some other contact with) email recipients and ask them to confirm they got my emails. I never get a copy of a sent message in the Sent Items folder now, regardless of recipient. It's kind of frustrating.

Make sure your EPIM version number is 11.2.4 and just in case remove and then re-add the mail account back in.

I was on 11.2.3, I didn't know a new version had been released. I've upgraded, deleted and re-added the account. I'll let you know what I see.

Good news -- I just sent an email and BCC:ed myself. I got the copy and there's a copy in Sent Items. Woo hoo!! 
Quick question - I like having most mail in Conversation view. but in Sent Items it would be most convenient to have the folder sorted in "pure" date order, not organized by conversation. Is that possible, i.e., override the view of one folder while everything else is in Conversation view?

Unfortunately using different kind of views for different mail folders ins't possible at the moment.

Well this doesn't seem to be fixed after all, at least not completely.
EPIM isn't sending a copy of my replies to the Send Items folder but rather apparently deleting them. For example, I just replied to an email (to someone else, not to myself) and there was no trace of it in Sent Items, Deleted Items, Inbox, Drafts or anywhere else I could find. I refreshed, etc., but to no avail.
It had been deleted -- I went to the same thread in my online web GMail inbox, and there was a link reading, "3 deleted messages in this conversation. View messages or delete forever." (The number of messages is unimportant, but one of them is my recently-sent message.) I clicked the "view messages" link, and saw the message I just sent with a link reading "This message has been deleted. Restore message". After clicking "Restore message" it appeared in my GMail Inbox then synced to EPIM a moment later.
The point isn't that GMail can restore deleted emails but rather that it was deleted at all, apparently by EPIM. Why is EPIM deleting my outgoing email instead of sending a copy to Sent Items? I've already reinstalled EPIM (11.2.4), removed and re-added my GMail account, etc.

According to the log file, the server reports there's no such a message in the Sent Items folder anymore, therefore EPIM deletes it locally. You need to check, maybe some other app (or a message rule on the server) moves/removes the message on the server.

I have no rules affecting the Sent Items folder, locally nor on GMail web.
I had four rules that deleted emails from specific (spam) addresses. It's Received. I have the same column layout for all folders, in all accounts: Attachments, Subject, From, Received.

Please use "Date" for sent emails.
